TUBITAK MRC has taken
the acrylamide reseach duty
TUBITAK MRC Food Institute
is going on its extensive studies on acrylamide in comestibles in
one of the FP6 projects in which it performs as a partner. 23 Institutes
from 13 different countries are collaborating in this project which
will be performed between 2003 and 2006. Within this project, institutes
are going on their studies about the comestibles produced in their
countries. To determine the health problems that food derived acrylamide
may cause on human body and to minimize these risks is one of the
aims of the project.
Within this project shortly named HEATOX, studies will be made to
understand the health risks of different toxic substances -including
acrylamide- which form during heating processes in different food
types and to develop methodologies in order to minimize the formation
of these toxic substances. Under the thematic area of FP6 Food Quality
and Safety programme, EC supports 4.2 million Euro for the HEATOX
project which aims to improve public health and welfare by providing
safe food. The other collaborators of the HEATOX project which is
being coordinated by Prof. Kerstin Skog from Sweden are lined up
as Germany, Austria, Belgium, Czech Republic, Denmark, Netherlands,
United Kingdom, Spain, Sweden, Switzerland, Italy, Norway, Turkey
and Chile. Also, European Consumers' Organization (BEUC) is working
in the project to execute the relation with consumers.
TUBITAK MRC, Food Institute is performing the scanning project on acrylamide
contents of heat processed comestibles, also is collaborating with
other European partners on standardization of methodologies related
to acrylamide analysis. This scanning study is intensifying over product
groups that were not examined previously. Among these products are
bakery, potatoe chips, dried fruits/nuts, infant formulas, biscuits,
extruded products, halvah, coffee, fried products and grilled food.
Achieved data will be used in acrylamid health risk estimation studies
which are still unclear. In the next step of TUBITAK MRC projects,
studies for decreasing the acrylamid amount of comestibles are going
to get started..
