The aim of this CRAFT August project is to acquire an understanding of the chemical, nutritional and microbiological characteristics of fermented beverages; to modernize the existing fixtures and fittings and/or plan and install new lines; to standardize production of beverages and extend their shelf-life through the use of selected autochthonous starters; to acquire preliminary information about the potential beneficial effects of the microorganisms on human health.
